This time of year, when night and day align and pastures begin to flourish is an ideal time for the Dingle master distiller to assess its casks and sample the whisky as it matures. This edition of the triple distilled Irish whiskey initially matured in bourbon casks before it was treated to a finish in Cabernet Sauvignon wine casks.
