3cl / 57.20% - That Boutique-y Rum Company is back with a second batch of pot-distilled rum from Australia's Black Gate distillery. Produced with molasses sourced from Queensland, fermented for up to two weeks, the rum is double distilled in direct-fired pot-stills, making for a punchy, full-flavoured spirit. This expression was treated to a three-year stay in casks that previously held tawny wine Australia's answer to Port, so expect plenty of richly tannic dark fruit and spice here.
